This creamy and delicious pumpkin chia seed pudding is extremely simple to make! It is entirely gluten-free and grain-free, Whole30 and paleo compliant, dairy-free, vegan, soy-free, nut-free, and sugar-free. It’s only sweetened with dates.
- 1 can full fat coconut milk
- 1/2 tsp pumpkin pie spice
- 1/8 tsp pink Himalayan salt, or other salt
- 1 tsp vanilla extract
- 4 dates, soaked in hot water 15 minutes
- 3/4 cup pumpkin puree
- 1/2 cup chia seeds
INSTRUCTIONS HOW TO MAKE IT :
Put all ingredients except chia seeds in a blender or food processor and blend until smooth.
